It’s World Baking Day and most local bakeries are either shut or we are not inclined to eat bakery products from our local bakeries processed with a lot of human touch. But there is still something we should be doing to satisfy our taste buds craving for some good baked food.

Here online baking tutorials and some regular grocery items come to the rescue. Yet there is one off-the-shelf and not so popular ingredient that makes the final product much more enjoyable.We used basic items like sugar, baking soda, curd, milk, oil or ghee and our favourite Parle-G biscuits for the flavour. Only, we added 2 table spoons of Non-GMO Soy Lecithin powder along with the other ingredients.

One of the main benefits of lecithin is emulsification, that is seamless mixing of oil or ghee with milk and water. It provides a great deal of smoothness and consistency through every bite of the cake.We got the this as the lovely result of the toil.

What else does lecithin do to our humble home baked cakes?

Moreover, if you wish to have the cake for a longer period of life, lecithin also extends its life by slowing down the starch retrogradation process, i.e. reversal of the consistent cake to broken pieces.

Lecithin is an excellent Surfactant and Release agent

Lecithin ensures a smooth separation of the food from its cooking surface helping retain perfect shape which is often very important in baked foods. Along with ghee or oil, lecithin acts as a surfactant. In process, it reduces the surface tension of the final substance, creating a thin and even release barrier achieved by oil or ghee alone.So even when you slice the cake in multiple pieces, you find the shape as smoothly cut.Much like you would have seen cutting the perfect cheese cakes that you would see at your local patisseries!
